The obtaining of the kernels are executed in 2 stages: The breaking of the walnut and the extraction of the kernel.
Our company is working with a hundred of producers who bring the kernels directly to our site in Vinay or to our buyer every sunday morning during the great season.




The breaking of the walnuts
It is traditionally realised by hand. For many years, we try to automate these tasks partially and totally. The most common breakers break the nuts by hitting.









The breaking of the kernels
The kernel is situated perpendicularly with the opening of the nuts. It is therefore easy to extract the kernel. The kernels are divided into three categories:
the whites, the broken "Arlequin", the halves and the blacks.
