Reception and Certification of the batches according to the A.O.C specifications
The batch is weighed, approved and identified with the date of reception and the name of the producer.  

The drying
This task consists in drying the kernels right after the breaking, in order to bring back the kernels moisture content at a level of 5-6%. This is the best level to preserve the kernels.  


Grading
The kernels are graded in the platform calibrators. The link between the grade of the kernel and the number of pieces per kilo is the following one:
-Grade of 17 mm: 500 to 600 pieces/kilo.
-Grade of 20 mm: 400 to 500 pieces/kilo.
-Grade superior to 22 mm:350 to 400 pieces/kilo.









The sorting
The kernels are sorted manually. The sorting is essential to classify the kernels per colour and per forms.










Storage
The kernels are stored in plastic cases in the refrigerators as darkness, a temperature below 7°C, a weak moisture content and a limited contact with oxygen are required to preserve them in the best conditions.  


Packaging
Our kernels are packed:
- For the industry : packaging in boxes of 12.5 kg in bulk or 2 vaccum bags of 6.25 kilos each.
- For the ultimate consumer:packaging in bags of 125 g.
The finished product is placed in the cold room.
